Summertime Blueberry and Avocado Salad

You’ve heard us talk before about that elusive Michigan summer fruit. We get apples in the fall, then suffer through the winter months. Finally, for a few short, glorious weeks in spring and summer, we get fruit. Cherries, of course, but also tart red strawberries and plump, perfect blueberries. When we’re lucky enough to get our hands on fresh-picked, locally-grown fruit, we try to make the most of it. This blueberry and avocado salad is the perfect way to enjoy those sweet summer berries. 

The first time I had this blueberry and avocado salad, my Aunt Sheri made it to go with our summer barbecue dinner. Sheri is a salad aficionado and always makes something delicious and different. When I first saw this dish, I wasn’t sure how I’d like it. Avocado, blueberry, and onion don’t seem like they should go well together. But they absolutely do. And this salad really is the perfect summer side dish. It goes great with grilled chicken or fish, and provides a unique, light alternative to pasta salad or potato salad. Plus, it’s packed with good-for-you ingredients, and it’s vegan! 

This is not a salad that I’d recommend making in advance. It’ll hold up for about an hour, but anything more than that and the avocados will start to break down. Also, you do not want to put this in the fridge once you’ve made it up. Finally, if you have a high-quality, fruity olive oil that’s not too strong, that would go best in this dressing. If not, no worries! It’ll still be great with a more traditional olive oil.

A light and fruity salad perfect for summer barbecues.

Ingredients

Dressing

  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon fresh mint, julienned
  • 1 tablespoon shallot or red onion, very finely chopped
  • 1 teaspoon agave nectar (or honey)
  • Pinch of salt and pepper, to taste

Salad

  • 3 large, ripe avocados, peeled and diced into ½ inch pieces
  • 1 ½  cup blueberries

Instructions

Whisk together dressing ingredients. Then, very gently toss dressing with avocados and blueberries until everything is coated. Serve immediately.
